Crunchy Nugget Wrap for Kids

Crunchy Nugget Wrap for Kids

Ingredients

Fish

  • 1 x 300 g box Sea Harvest Fish Nuggets

Lime Mayo

  • ⅔ C (180 ml) mayonnaise
  • 1 lime

To Assemble

  • 6 wraps
  • 200 g lettuce, thinly sliced
  • ½ small mango, peeled and cubed
  • 125 g baby tomatoes, quartered
  • 3 mini cucumbers, sliced into rounds
  • 200 g carrots, peeled and cut into thin matchsticks

To Serve (optional)

  • 150 g frozen chips, cooked according to the package instructions

Method

Fish

  • Preheat the oven to 200 ºC.
  • Lay frozen fish nuggets onto a baking tray. Place into the oven for 15-18 minutes and cook until golden and crunchy. Alternatively, cook in an air fryer for the recommended time.

 

Lime Mayo

  • Add the mayonnaise to a bowl and squeeze in the lime juice. Mix until completely combined and smooth.

 

To Assemble

  • Warm the wraps on the stove in a medium-sized pan on low heat for 30 seconds or in the microwave for 20 seconds until they are pliable.
  • To build the wraps; start with a smear of lime mayo, then add lettuce as a base, place 2-3 Sea Harvest Fish Nuggets on top of the lettuce, followed by cubes of mango, wedges of tomato and slices of cucumber. on top and around the nuggets. Place the carrots on either side of the nuggets. Once the wraps have been packed with the filling, fold the bottom and top of the wrap over, like an envelope, then roll the wrap up. You may need to secure it with a toothpick.
  • Repeat until all of the wraps are filled and rolled, then slice into halves and serve with a drizzle of lime mayo and oven-baked/air-fried chips.

How do I BAKE fish?

Dollops of flavoured butter (or a little olive oil) on fish portions are ideal for baking. Wrap fish portions in foil to keep moisture in – as fish forms its own juices. Open just before end of baking to allow for browning. Fish can also be placed in a suitable oven dish and covered. Baking takes around 20 minutes depending on the portion size.
