Preheat the oven to 180 ºC.
Place the Sea Harvest Country Fry onto a baking tray from frozen. Cook until golden brown. Tip: fish can also be cooked in an airfryer.
Mix all the ingredients for the raita together in a small bowl and then cover and place into the fridge until needed.
Add oil to a large frying pan over medium heat. Add the mustard seeds and nuts and fry until the nuts are toasted. Add the sliced green chillies, curry leaves, garlic and ginger and fry for 2 minutes until fragrant. (Tip: for a kid-friendly version, omit the chillies).
Add the rice and the lentils to the pan and then sprinkle in the turmeric. Add the lemon zest and juice and mix well to combine. Stir and heat through until everything is combined.
Season and serve immediately with Sea Harvest Country Fry fresh slices of lemon, poppadoms and raita on the side.
