Ingredients

  • 2 Country Fry Hake Fillets
  • 1 red onion, diced
  • 1 garlic clove, finely chopped
  • 150 g button mushrooms, quartered
  • 150 g baby tomatoes
  • 1 x 400 g tin of baked beans
  • A shake of your favourite hot sauce
  • 2 spring onions, sliced (green part only)
  • 2 eggs, fried
  • Sea salt and freshly ground pepper
  • Slices of toast to serve

Method

Preheat the oven to 180 ºC. Lay the frozen Country Fry Hake Fillets onto a baking tray. Place into the oven to cook until golden brown. Heat a splash of olive oil in a large frying pan over medium heat. Add the onion and fry for a few minutes until translucent. Add the garlic and fry for a minute until fragrant. Add the mushrooms and tomatoes and fry for 3 minutes. Add the baked beans and hot sauce and cover and simmer for 5 minutes. Add another splash of oil or a knob of butter (your preference) to another frying pan over medium-high heat. Crack the eggs in and cook sunnyside up. Top the fish with the fried eggs Garnish with spring onion and season to taste. Serve with slices of chunky buttered toast.

How do I BAKE fish?

Dollops of flavoured butter (or a little olive oil) on fish portions are ideal for baking. Wrap fish portions in foil to keep moisture in – as fish forms its own juices. Open just before end of baking to allow for browning. Fish can also be placed in a suitable oven dish and covered. Baking takes around 20 minutes depending on the portion size.
