Spicy Fish Bites with Blue Cheese Dipping Sauce

Ingredients

Hot Sauce

  • ⅓ C (80 ml) butter
  • ¼ C (60 ml) Tabasco
  • 2 tsp (10 ml) brown sugar
  • 1 tsp (5 ml) paprika
  • ½ tsp (2,5 ml) garlic powder

Creamy Blue Cheese Dipping Sauce

  • 100 g blue cheese, chopped
  • 1 C (250 ml) plain yoghurt
  • A squeeze of lemon juice
  • Sea salt and freshly ground pepper
  • A handful of chives, chopped

Spicy Fish Bites

  • 1 x box (450 g) Sea Harvest Hake Medallions, cut into threes
  • 1 C (250 ml) milk
  • 2 large eggs
  • 1 Tbsp (15 ml) Tabasco
  • 1 C (250 ml) flour, seasoned
  • 1 tsp (5 ml) paprika
  • 1 tsp (5 ml) cayenne pepper
  • Enough oil for deep frying
  • Sea salt and freshly ground pepper

Preparation & Cooking

Hot Sauce For the hot sauce, mix the ingredients together in a small pot over medium heat until melted and combined. Season to taste.   Creamy Blue Cheese Dipping Sauce For the blue cheese dipping sauce, mix the ingredients together in a bowl until well combined and smooth.   Spicy Fish Bites For the hake, set out 2 bowls and whisk the milk, eggs and Tabasco in one bowl then the flour, paprika, cayenne, salt and pepper into another bowl and mix well to combine. Using your left hand grab a medallion piece and dunk it into the egg mix then roll it into the flour then use your right hand and dunk it into the egg again then use your left pop it back into the flour for a second dredge with your left hand. Place the dredged ball onto a wire rack. Repeat this process until you have covered all of the medallions. Preheat the oven to 120 ºC. Fill a large dutch oven or deep fryer (just over half full) with canola oil and bring it up to frying temperature. Check the temperature periodically until it reaches 180 ºC. Carefully fry the fish in batches of 4-6 depending on how big your pot/fryer is until they are golden brown. Drain the fried dish on some kitchen towel and season immediately with salt and pepper. You can keep the cooked fish pieces in the oven while you finish frying. Toss the fried fish bites in the prepared hot sauce then serve with the blue cheese dipping sauce on the side.
