Homemade Tartar Sauce
Crispy Onions
To Assemble
Preheat the oven to 220 ºC.
Lay frozen Fish Friday Lemon fillets onto a baking tray. Place into the oven to cook for 20-30 minutes until golden and crunchy. Alternatively, cook in an air fryer for the recommended time
Homemade Tartar Sauce
In a mixing bowl add the carrot, capers, lemon, gherkins, dill and mayonnaise together and mix well to combine.
Crispy Onions
Add the flour, salt, paprika and oregano to a mixing bowl and mix to combine.
Heat the oil in a small, deep-sided pot over medium heat.
Dust the thinly sliced onions in the flour mixture and then deep fry in small batches until golden brown and crispy, about 5-8 minutes. Use a slotted spoon during the frying process to stir the onions and separate them so that they don’t stick together. Remove and drain on a sheet of kitchen towel.
To Assemble
Open the Gatsby bread and start by spreading tartare sauce on both sides of the loaf. Next lay some lettuce and sliced tomato on the base. Add 4 fillets of fish, slightly overlapping and top with slap chips. Sprinkle some crispy onions on top and drizzle over more tartar sauce. Close the Gatsby, slice it into 4 equally sized portions and enjoy!
