Country Fry with South Indian Yellow Rice & Raita

Crispy fish with an incredibly flavourful and lemony spiced yellow rice. Best served with cooling raita and crunchy poppadoms.

Fish

  • 500 g (1 box) Sea Harvest Country Fry

Raita

  • 1 C (250 ml) double cream yoghurt
  • 1 clove of garlic, finely chopped
  • small knob of ginger, finely chopped
  • 1 Tbsp (15 ml) chopped coriander
  • 1 Tbsp (15 ml) chopped mint
  • ¼ C (60 ml) diced cucumber
  • zest and juice of 1 lemon
  • 1 Tbsp (15 ml)  garam masala
    sea salt and freshly ground pepper

Yellow Rice

  • 1 Tbsp (15 ml) cooking oil
  • 1 Tbsp (15 ml) mustard seeds
  • 1 C (250 ml) peanuts
  • 2 green chillies, sliced
  • 20 curry leaves
  • 1 tsp (5 ml) crushed garlic
  • 1 tsp (5 ml) crushed ginger
  • 1 tsp (5 ml) ground turmeric
  • zest and juice of 1 lemon
  • 250 g cooked basmati rice
  • 1 C (250 ml) cooked lentils
    sea salt and freshly ground pepper

Fish

Preheat the oven to 180 ºC.
Place the Sea Harvest Country Fry onto a baking tray from frozen. Cook until golden brown. Tip: fish can also be cooked in an airfryer.

Raita

Mix all the ingredients for the raita together in a small bowl and then cover and place into the fridge until needed.

Yellow Rice

Add oil to a large frying pan over medium heat. Add the mustard seeds and nuts and fry until the nuts are toasted. Add the sliced green chillies, curry leaves, garlic and ginger and fry for 2 minutes until fragrant. (Tip: for a kid-friendly version, omit the chillies).

Add the rice and the lentils to the pan and then sprinkle in the turmeric. Add the lemon zest and juice and mix well to combine. Stir and heat through until everything is combined.

Season and serve immediately with Sea Harvest Country Fry fresh slices of lemon, poppadoms and raita on the side.
