2 spring onions, sliced
¼ C (60 ml) chopped parsley
1 lemon, cut into wedges
Heat the olive oil in a large pan or pot over medium heat. Fry the onion, chorizo and paprika, chilli flakes, cumin and turmeric (or saffron, if using) for 5-8 minutes, until the chorizo releases its oils and the onions start to soften.
Add the rice and chicken stock and allow the rice to simmer for 10 minutes. Just before all the liquid has been absorbed, add the seafood mix, and frozen peas. Stir gently until the seafood is thoroughly cooked and all the liquid has been absorbed. Serve with freshly squeezed lemon juice, chopped spring onion and parsley.
