Seafood Curry with Fresh Coriander Yoghurt

Buy the Sea Harvest Seafood Mix and make your next lunch event a huge success. The dish serves six portions and you will not need a great deal of time to prepare the meal.

Simply heat 4 tablespoons of canola oil in a pan over medium heat, and once warm enough, add a roughly chopped onion and sauté it until the onion is perfectly cooked. Be careful not to char the onion. Now add garlic, ginger, and chilli, and simmer for about a minute. Next, you will need 4 finely chopped garlic cloves, a red chilli (cut down the middle) and 6 cm of ginger (peeled and finely grated).

Add 2 tablespoons of crushed cumin seeds, 2 tablespoons of crushed pepper seeds, 2 tablespoons of crushed mustard seeds, and 2 tablespoons of crushed coriander seeds. Also add a tablespoon of sea salt.

Be sure to stir through until all the spices are toasted, and then stir 4 tablespoons of tomato paste into the spices. Once it is well mixed, add 500 ml of buttermilk and simmer the mix over low heat with the lid on for about 20 minutes. If you experience too much reduction of the mixture, simply add a bit of water.

The mixture is now ready for the star ingredient. Add the delicious Sea Harvest seafood mix and cook for about 5 minutes. Remove from the heat and top it off with fresh coriander garnish.

For the yoghurt, you can combine 2 cups of double cream yoghurt with 4 tablespoons of roughly chopped coriander, and a tablespoon of toasted crushed cumin seeds. Serve it on the side with 4 buttery rotis.
