Sole in Orange and Lime Sauce ♥

Serves: 2 - 4

INGREDIENTS:

  • 4 Sea Harvest Dressed Sole Fillets
  • 1 teaspoon salt
  • ¼ cup sugar
  • 1 tablespoon corn starch
  • 1¼ cup freshly squeezed orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons lemon juice
  • 1 tablespoon grated orange rind
  • 1 tablespoon soft margarine
  • Sliced orange, avocado and white grapes (for garnish)

METHOD:

  1. Arrange the fillets in a lightly oiled shallow baking pan.
  2. Sprinkle evenly with salt.
  3. Mix together sugar and corn starch in a saucepan; add the orange and lime juice and cook, stirring constantly, until clear and thickened.
  4. Add the orange rind, lemon juice and margarine and heat gently.
  5. Brush the fillets with a small amount of glaze, and grill at about 10 cm from heat for 8 to 10 minutes.
  6. Garnish platter with the slices of orange, avocado and green grapes; serve with the remaining sauce.
