What you need

Serves 4-6

INGREDIENTS:

  • 1 x Sea Harvest Lemon Pepper Grill Bakes cooked to instruction on the pack, fry or bake
  • 3 tablespoons olive oil
  • 2 bay leaves
  • 3 whole cracked and finely bashed all spice berries 
  • 4 cloves garlic finely chopped
  • 1 thinly sliced green pepper
  • 1 thinly sliced onion
  • 2 medium ripe tomatoes peeled, deseeded, quartered and julienned
  • ½ cup dry white wine
  • ½ cup small black pitted olives, rinsed
  • Sea salt and freshly ground black pepper
  • Freshly chopped parsley for garnishing the fish

METHOD:

  1. Heat the olive oil in a frying pan and add the bay leaves, cook them for about 2 minutes or until they start to turn brown, the oil should be beautifully  fragrant by then.
  2. Now add the all spice and garlic and give it a quick stir and cook for about half a minute before adding the green pepper and onion and cook for about 5 minutes to wilt it down.
  3. You can now add the white wine, olives and season with salt and pepper, cook till the wine is slightly reduced and remove from the heat.
  4. Assemble your Lemon Pepper Grill Bakes onto a platter and spoon the sauce down the middle of the fish, garnish with the parsley and serve with crushed parsley, a fresh green salad and Portuguese rolls to mop up the sauce.
