Oven Bake
Preheat the oven to 200ºC. Remove fins and belly fins. Place fish in an oven roasting dish, season with salt and freshly ground pepper. Drizzle with a little freshly squeezed lemon juice and olive oil. Bake for 20 minutes in a conventional oven and 15 minutes in a thermo fan oven, until golden and cooked through.
Pan Fry
Remove fins and belly fins. Drizzle fish with lemon juice. Coat hake in seasoned flour. Heat a little oil in a frying pan on medium heat.
Fry fish for ± 6 minutes on each side, until golden and cooked through. Drain on absorbent paper.
Microwave
Remove fins and belly fins. Place fish in a microwaveable dish. Mix together in a small bowl 50g melted butter, a pinch of salt and freshly ground black pepper. Pour over fish and cover with plastic wrap or a microwave lid. Microwave (1000 watt) on medium high (80%) for 6 - 8 minutes, or until cooked through. Allow to stand for 2 minutes before serving.
